Tender Crockpot Garlic Butter Beef Bites with Herb-Roasted Baby Potatoes

Ingredients:

2 lbs beef stew meat, cut into bite-sized pieces
1½ lbs baby potatoes, halved
5 tablespoons unsalted butter, melted
6 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon Worcestershire sauce
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon dried thyme
1 teaspoon dried parsley
½ teaspoon dried rosemary
1 teaspoon salt
½ teaspoon black pepper
½ cup beef broth
1 tablespoon cornstarch (optional, for thickening)
2 tablespoons cold water (optional)
Fresh chopped parsley for garnish

Directions:

Season the beef with salt, black pepper, onion powder, smoked paprika, thyme, and rosemary.
Heat olive oil in a skillet over medium-high heat and quickly sear the beef for 2-3 minutes until lightly browned. This step is optional but adds extra flavor.
Place the halved baby potatoes into the bottom of the slow cooker.
Add the browned beef on top of the potatoes.
In a bowl, combine melted butter, minced garlic, Worcestershire sauce, dried parsley, and beef broth.
Pour the garlic butter mixture evenly over the beef and potatoes.
Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours until the beef is fork tender and the potatoes are perfectly cooked.
If you’d like a thicker sauce, whisk together cornstarch and cold water. Stir it into the slow cooker during the last 20 minutes of cooking.
Garnish with freshly chopped parsley before serving.
Serve hot with crusty bread, steamed vegetables, or a fresh green salad.
