Southern Fried Rabbit

Ingredients:

• 1 whole rabbit, cut into pieces
• 2 cups buttermilk
• 1½ cups all-purpose flour
• ½ cup cornmeal
• 1 tsp paprika
• 1 tsp garlic powder
• 1 tsp onion powder
• ½ tsp salt
• ½ tsp black pepper
• ¼ tsp cayenne pepper (optional)
• Vegetable oil, for frying

Method:

1. Place the rabbit pieces in a bowl and pour the buttermilk over them. Cover and refrigerate for 2–4 hours to help tenderize the meat.
2. In a shallow bowl, combine the flour, cornmeal, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
3. Remove the rabbit from the buttermilk and coat each piece thoroughly in the seasoned flour mixture.
4. Heat about ½ inch of oil in a large skillet over medium heat. Fry the rabbit pieces in batches for 6–8 minutes per side, until golden brown and cooked through. Drain on paper towels and serve hot with mashed potatoes, gravy, or coleslaw. 🍽️✨
