A classic comfort-food dinner with tender beef patties, creamy garlic mashed potatoes, and a rich mushroom-and-onion gravy. This version follows the traditional technique of searing the patties first, then finishing them in the gravy for extra flavor.

🥩 Salisbury Steak

Ingredients

  • 1½ lb (680 g) ground beef, preferably 80–85% lean
  • ½ cup breadcrumbs or panko
  • 1 large egg
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

🍄 Mushroom-Onion Gravy

  • 2 tbsp butter
  • 1 medium yellow onion, thinly sliced
  • 8 oz (225 g) mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • ½ tsp dried thyme
  • ½ tsp Dijon mustard
  • Salt and black pepper, to taste
  • 1 tbsp chopped fresh parsley, for garnish

🧄 Garlic Mashed Potatoes

  • 2 lb (900 g) Yukon Gold or russet potatoes, peeled and cubed
  • 4–5 garlic cloves
  • 4 tbsp butter
  • ½ cup warm milk or half-and-half
  • ¼ cup sour cream, optional
  • 1 tsp salt, plus more for boiling water
  • ½ tsp black pepper

👩‍🍳 Instructions

1. Make the mashed potatoes

  1. Place potatoes and garlic cloves in a large pot.
  2. Cover with cold water and add a generous pinch of salt.
  3. Bring to a boil, then reduce to a simmer.
  4. Cook for 15–20 minutes, until the potatoes are fork-tender.
  5. Drain well.
  6. Add butter, warm milk, sour cream, salt, and pepper.
  7. Mash until smooth and creamy. Keep warm.

2. Prepare the Salisbury steaks

  1. In a large bowl, combine ground beef, breadcrumbs, egg, Worcestershire sauce, Dijon, garlic powder, onion powder, salt, and pepper.
  2. Mix gently just until everything is combined—don’t overmix.
  3. Shape into 4–6 oval patties, about ½–¾ inch thick.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Brown the patties for about 3–4 minutes per side. They don’t need to be completely cooked yet.
  6. Remove the patties and set aside.

3. Make the mushroom-onion gravy

  1. Reduce the heat to medium and add butter to the same skillet.
  2. Add sliced onions and cook for 5–7 minutes, until softened and lightly browned.
  3. Add mushrooms and cook another 5–6 minutes, until golden.
  4. Stir in minced garlic and cook for about 30 seconds.
  5. Sprinkle flour over the mushrooms and onions. Stir and cook for 1 minute.
  6. Slowly whisk in the beef broth to prevent lumps.
  7. Add Worcestershire sauce, Dijon, thyme, salt, and pepper.
  8. Simmer for 3–5 minutes, until the gravy begins to thicken.

4. Finish the steaks

  1. Return the browned Salisbury steaks to the skillet.
  2. Spoon the gravy over the patties.
  3. Cover and simmer gently for about 8–12 minutes, until the beef is fully cooked and the gravy is thick and glossy.
  4. Sprinkle with fresh parsley.

5. Serve

Spoon a generous mound of garlic mashed potatoes onto each plate. Place the Salisbury steak on top and smother everything with the mushroom-onion gravy. 😍

Tip: For the richest gravy, brown the beef and vegetables in the same skillet and scrape up the browned bits from the bottom—they add a lot of flavor.
