Poor Man’s Stew

Ingredients:

• 1½ lbs ground beef
• 1 medium onion, chopped
• 3 cloves garlic, minced
• 4 medium potatoes, peeled and cut into chunks
• 3 carrots, sliced
• 1 can (14.5 oz) diced tomatoes
• 2 cups beef broth
• 2 tbsp tomato paste
• 1 tsp Worcestershire sauce
• 1 tsp dried thyme
• 1 tsp paprika
• ½ tsp black pepper
• Salt, to taste
• 1 tbsp olive oil
• 1 tbsp fresh parsley, chopped (optional)

Method:

1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and onion and cook for 6–8 minutes, breaking up the beef, until browned. Drain excess grease if needed.
2. Add the garlic and cook for another minute. Stir in the tomato paste, paprika, thyme, and black pepper.
3. Add the diced tomatoes, beef broth, and Worcestershire sauce. Stir well and bring to a gentle boil.
4. Add the potatoes and carrots. Reduce the heat, cover, and simmer for 30–40 minutes, stirring occasionally, until the vegetables are tender and the stew has thickened.
5. Taste and adjust the salt and seasoning. Simmer uncovered for a few more minutes if you prefer a thicker stew.
6. Garnish with fresh parsley and serve hot with crusty bread or homemade biscuits.
