Smothered Fried Chicken Over White Rice & Homemade Gravy with Grandma Biscuits
A classic Southern comfort-food plate: crispy seasoned fried chicken simmered in rich homemade onion gravy, served over fluffy white rice with buttery, tender biscuits.

Ingredients
For the chicken:
- 6 bone-in chicken thighs or drumsticks
- 1½ cups all-purpose flour
- 1½ teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- ½ teaspoon seasoned salt
- ½ teaspoon cayenne pepper, optional
- 1 cup buttermilk
- 2–3 tablespoons hot sauce, optional
- Vegetable or canola oil, for frying
For the homemade gravy:
- 4 tablespoons butter or reserved chicken-frying oil
- 4 tablespoons all-purpose flour
- 1 medium yellow onion, thinly sliced
- 2½ cups chicken broth
- ½ cup whole milk or evaporated milk
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon black pepper
- Salt, to taste
- ½ teaspoon Worcestershire sauce, optional
🍚 For the White Rice
- 2 cups long-grain white rice
- 3 cups water
- 1 tablespoon butter
- ½ teaspoon salt
🥛 Grandma-Style Biscuits
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon sugar
- 6 tablespoons cold butter, cubed
- ¾–1 cup cold buttermilk
- 2 tablespoons melted butter, for brushing
1. Season and Marinate the Chicken
Pat the chicken dry.
Mix the flour, salt, pepper, garlic powder, onion powder, paprika, thyme, seasoned salt and cayenne in a large bowl.
In another bowl, combine the buttermilk and hot sauce.
Place the chicken in the buttermilk mixture and let it sit for 20–30 minutes. For deeper flavor, refrigerate it for several hours.
2. Fry the Chicken
Remove the chicken from the buttermilk, allowing excess to drip off.
Dredge each piece thoroughly in the seasoned flour, pressing the flour onto the chicken.
Heat about ½ inch of oil in a large heavy skillet over medium heat.
When the oil is hot, carefully add the chicken without overcrowding the pan.
Fry for approximately 5–7 minutes per side, depending on the size of the pieces, until deeply golden brown.
The chicken will finish cooking in the gravy, so it doesn’t need to be completely cooked through at this stage.
Transfer to a plate lined with paper towels.
Important: Chicken should reach 165°F (74°C) internally before serving.
3. Make the Homemade Gravy
Pour off excess frying oil, leaving about 4 tablespoons of fat in the skillet. You can also use butter.
Add the sliced onion and cook over medium heat for 5–7 minutes, until softened and lightly golden.
Sprinkle in the flour and stir constantly for about 2 minutes.
Slowly whisk in the chicken broth, scraping up the flavorful browned bits from the bottom of the skillet.
Add the milk, garlic powder, onion powder, black pepper and Worcestershire sauce.
Bring the gravy to a gentle simmer.
Cook for 3–5 minutes, stirring until thick and creamy.
Taste and adjust the salt and pepper.
4. Smother the Chicken
Return the fried chicken pieces to the skillet.
Spoon the gravy over the chicken.
Cover and simmer gently for 20–25 minutes, turning the chicken once or twice.
The chicken should become tender and flavorful while the gravy becomes rich and silky.
If the gravy becomes too thick, add a splash of chicken broth.
🍚 5. Make the White Rice
Rinse the rice until the water runs mostly clear.
Add rice, water, butter and salt to a saucepan.
Bring to a boil, then reduce the heat to low.
Cover and cook for 15–18 minutes.
Turn off the heat and let it rest, covered, for 5–10 minutes.
Fluff gently with a fork.
🥛 6. Make Grandma’s Biscuits
Preheat the oven to 425°F (220°C).
Whisk together the flour, baking powder, baking soda, salt and sugar.
Cut in the cold butter using your fingertips or a pastry cutter until the mixture resembles coarse crumbs.
Gradually add the cold buttermilk, stirring just until a soft dough forms.
Don’t overmix—the less you work the dough, the more tender the biscuits will be.
Turn the dough onto a lightly floured surface and gently pat it to about ¾-inch thickness.
Cut into biscuits using a round cutter.
Place them close together on a baking sheet.
Bake for 12–15 minutes, until golden brown.
Brush immediately with melted butter.
🍽️ 7. Serve
Spoon a generous portion of fluffy white rice onto each plate.
Place the smothered fried chicken on top or alongside the rice.
Ladle plenty of the creamy onion gravy over the chicken and rice.
Serve with two warm homemade biscuits and extra gravy on the side.
⭐ Southern Comfort Tip
For an especially rich gravy, use some of the browned bits and seasoned drippings left in the skillet after frying the chicken. That’s where much of the classic homemade flavor comes from.
