Ingredients
For the Quesadillas
- 1 lb (450 g) ground beef
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup dill pickles, finely chopped
- 4 burrito-size flour tortillas
- 2 cups shredded cheddar cheese
- 1 tbsp butter or cooking oil, for the griddle
Special Burger Sauce
- ½ cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp finely chopped dill pickles
- 1 tsp pickle juice
- ½ tsp garlic powder
- ½ tsp onion powder
Instructions
- Make the sauce:
Mix mayonnaise, ketchup, mustard, chopped pickles, pickle juice, garlic powder, and onion powder in a small bowl. Refrigerate until ready to use.
- Season the beef:
Divide the ground beef into 4 equal portions. Season with salt and black pepper.
- Heat the Blackstone:
Preheat your griddle to medium-high heat. Lightly grease the surface.
- Cook the beef:
Place the beef portions on the hot griddle and smash them thin with a spatula. Cook for about 2–3 minutes, then flip and cook another 1–2 minutes, until browned and cooked through.
- Add the pickles:
Break the cooked beef into small pieces and mix in the chopped dill pickles.
- Build the quesadillas:
Place a flour tortilla on the griddle. Spread a thin layer of burger sauce over half of the tortilla. Add about ½ cup cheddar cheese, followed by ¼ of the beef mixture, then another small handful of cheese.
- Fold and toast:
Fold the tortilla in half over the filling. Cook for 2–3 minutes per side, pressing gently with your spatula, until golden brown and crispy and the cheese is completely melted.
- Repeat:
Make the remaining 3 quesadillas.
- Serve:
Cut each quesadilla into 3–4 wedges and serve immediately with extra burger sauce, pickles, or ketchup.
