Classic Ketchup-Free Meatloaf
If you love old-fashioned meatloaf but don’t like ketchup, this version is perfect. It stays juicy and tender, with savory onions, Worcestershire sauce, and a delicious brown sugar–mustard glaze instead of ketchup.

Ingredients
For the Meatloaf
- 2 lbs ground beef (80/20 works best)
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 cup plain breadcrumbs
- 2 large eggs
- ¾ cup milk
- 2 tbsp Worcestershire sauce
- 1 tbsp yellow mustard
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- 2 tbsp fresh parsley, chopped (optional)
Ketchup-Free Glaze
- ¼ cup brown sugar
- 3 tbsp yellow mustard
- 2 tbsp Worcestershire sauce
- 1 tbsp apple cider vinegar
- 1 tbsp honey or maple syrup
- ½ tsp smoked paprika

1. Preheat the oven
Heat oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
2. Soften the breadcrumbs
In a large bowl, combine the breadcrumbs and milk. Let them sit for about 5 minutes until the milk is absorbed. This helps keep the meatloaf moist.
3. Add the remaining ingredients
Add the ground beef, diced onion, garlic, eggs, Worcestershire sauce, mustard, salt, pepper, garlic powder, onion powder, smoked paprika, and parsley.
4. Mix gently
Use your hands or a large spoon to mix everything until just combined. Don’t overmix, or the meatloaf can become dense.
5. Shape the meatloaf
Transfer the mixture to the prepared pan and shape it into a loaf. For a more caramelized exterior, you can shape it directly on a parchment-lined baking sheet.
6. Make the glaze
Whisk together the brown sugar, mustard, Worcestershire sauce, apple cider vinegar, honey, and smoked paprika.
7. Glaze the meatloaf
Spread about half of the glaze over the top of the meatloaf.
8. Bake
Bake uncovered for approximately 50–60 minutes.
Brush the remaining glaze over the top during the last 10–15 minutes of baking.
9. Check for doneness
The center should reach 160°F (71°C) on an instant-read thermometer.
10. Rest before slicing
Remove from the oven and let the meatloaf rest for 10–15 minutes before slicing. This helps the juices redistribute and keeps the slices together.
