My husband walked into the kitchen, sniffed the air, and said, “Are we having burgers?” I just smiled and handed him a bowl of this instead. He took one bite and looked at me like I’d just performed magic. Now he asks for it at least twice a month.
This is one of those recipes that feels like a warm hug on a cold evening. It’s creamy, cheesy, loaded with all those classic cheeseburger flavors, and honestly tastes like comfort in a bowl. The best part? It comes together in one pot, and you probably already have most of the ingredients sitting in your fridge right now.
The smell alone will have everyone hovering around the stove asking when dinner’s ready.
**INGREDIENTS:**
• 1 lb ground beef
• 1 small onion, diced
• 2 cloves garlic, minced
• 3 cups chicken or beef broth
• 2 cups diced potatoes
• 1 cup shredded cheddar cheese
• ½ cup heavy cream
• 2 tablespoons butter
• 2 tablespoons flour
• 1 teaspoon mustard
• Salt and pepper to taste
• Optional: diced pickles, crumbled bacon, chopped green onions
**INSTRUCTIONS:**
Brown the ground beef in a large pot over medium heat until fully cooked. Drain any excess grease.
Toss in the diced onion and garlic. Cook until the onion softens and smells sweet and buttery.
Sprinkle the flour over the beef mixture and stir well. Let it cook for about a minute so it loses that raw flour taste.
Pour in the broth slowly while stirring. Add the diced potatoes.
Bring everything to a gentle simmer. Let it cook until the potatoes are fork-tender, about 15 minutes.
Stir in the butter, heavy cream, mustard, and shredded cheddar. Keep stirring until the cheese melts into the soup and everything gets velvety smooth.
Taste and season with salt and pepper.
Ladle into bowls and top with pickles, bacon, or green onions if you’re feeling fancy.
Serve it with some crusty bread or crackers on the side, and watch it disappear. Seriously, my kids scraped their bowls clean and my husband went back for seconds before I even sat down.
