I made this on a Tuesday night when I had absolutely nothing planned for dinner, and now my husband keeps asking when I’m making “that potato thing” again.It’s just crispy golden potatoes, seasoned ground beef, and melted cheese all cooked together in one skillet. But somehow it tastes like the kind of comfort food you’d drive across town for.
The potatoes get these beautiful caramelized edges where they touch the pan, the beef soaks into everything, and the cheese just melts down into all the little gaps.I’ve been making this at least twice a month because it’s genuinely that easy and that good. INGREDIENTS:
1 ½ lbs ground beef* 4 medium potatoes, diced into small cubes* 1 small onion, diced* 2 cloves garlic, minced* 1 cup shredded mozzarella or cheddar cheese* 2 tablespoons olive oil or butter* 1 teaspoon paprika* ½ teaspoon garlic powder* Salt and black pepper to taste* Fresh parsley for garnish (optional)
INSTRUCTIONS:
Heat the olive oil or butter in a large skillet over medium-high heat.Add the diced potatoes in an even layer and let them cook undisturbed for about 5 minutes until they start getting golden on the bottom.Stir and continue cooking another 8–10 minutes, stirring occasionally, until the potatoes are tender and crispy-edged.Push the potatoes to the side of the skillet and add the ground beef to the center.Break up the beef as it cooks, seasoning with paprika, garlic powder, salt, and pepper.Once the beef is mostly browned, add the diced onion and garlic, stirring everything together.Cook for another 3–4 minutes until the onion softens and the garlic smells rich and buttery.Mix the potatoes and beef together evenly in the skillet.Sprinkle the shredded cheese over the top and let it sit on low heat for 2–3 minutes until the cheese melts into everything.Remove from heat, garnish with parsley if you like, and serve straight from the skillet.Would you add extra cheese or keep it just like this?
