Crispy Chicken Caesar Sandwiches

These crispy chicken Caesar sandwiches combine juicy, golden chicken cutlets with crunchy romaine lettuce, creamy Caesar dressing, Parmesan cheese and toasted ciabatta bread to create the ultimate restaurant-style sandwich.

Ingredients (serves 4):

For the chicken:
– 2 large boneless, skinless chicken breasts
– 1 cup buttermilk
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– Salt and black pepper to taste
– 1 cup all-purpose flour
– 2 beaten eggs
– 2 cups panko breadcrumbs
– ½ cup grated Parmesan cheese
– Vegetable oil for frying

For the Caesar salad:
– 3 cups chopped romaine lettuce
– ½ cup Caesar dressing
– ¼ cup grated Parmesan cheese
– 1 teaspoon lemon juice
– Freshly cracked black pepper

For assembly:
– 4 ciabatta rolls or sandwich buns
– Butter for toasting the bread
– Extra Parmesan shavings
– Optional extras: crispy bacon and sliced tomatoes

Instructions:

1. Prepare the chicken:

Slice each chicken breast horizontally to create thin cutlets. Pound lightly until an even thickness is achieved.

In a bowl, combine the buttermilk, garlic powder, paprika, salt and pepper. Add the chicken and marinate for at least 30 minutes.

2. Bread the chicken.

Set up three bowls:

Flour
Beaten eggs
Panko mixed with Parmesan cheese.

Dip the chicken first into the flour, then into the beaten eggs, and finally into the panko mixture. Press firmly so the coating sticks well.

3. Fry until crispy.

Heat about 2.5 cm of oil in a frying pan over a medium heat.

Cook the chicken for 3–4 minutes on each side until it is a deep golden brown colour and has reached an internal temperature of 165°F (74°C). Transfer to kitchen paper.

4. Make the Caesar salad.

In a large bowl, toss together:

– romaine lettuce
– Caesar dressing
– Parmesan cheese
– Lemon juice
– Black pepper

Mix until coated.

5. Toast the bread.

Lightly butter the ciabatta rolls and toast in a skillet or oven until golden and crisp.

6. Assemble the sandwiches.

Layer:

Crispy chicken
Caesar salad mixture
Extra Parmesan

Top with the toasted bread and serve immediately.

– Use ciabatta or crusty artisan bread for the best crunch.
Panko breadcrumbs make the chicken extra crispy.
Add bacon for a richer flavour.
For a lighter version, air fry at 200°C for 14–16 minutes.
