Fried Gizzards
Ingredients:
- 2 pounds chicken gizzards
- 2 cups buttermilk
- 2 cups all-purpose flour
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon Cajun seasoning
- Vegetable oil for frying
Instructions:
Clean the gizzards thoroughly and place them in a pot of water. Boil for about 45 minutes until tender, then drain and let cool slightly.
Place the cooked gizzards in a bowl with the buttermilk and let soak for at least 30 minutes.
In another bowl, combine the flour, garlic powder, onion powder, paprika, salt, black pepper, and Cajun seasoning.
Remove the gizzards from the buttermilk and coat them thoroughly in the seasoned flour mixture.
Heat vegetable oil in a deep skillet or fryer over medium-high heat. Fry the gizzards in batches for about 4–5 minutes until golden brown and crispy.
Remove and place on paper towels to drain excess oil. Serve hot with hot sauce or your favorite dipping sauce.
