Okra and Tomatoes Stew
Ingredients:
- 1 pound fresh okra, sliced
- 2 tablespoons bacon grease or olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 3 cups diced tomatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1 teaspoon sugar
- 1/2 cup chicken broth
Instructions:
Heat the bacon grease or olive oil in a large skillet or pot over medium heat. Add the chopped onion and cook until softened. Stir in the garlic and cook for another minute.
Add the sliced okra and cook for 5–7 minutes, stirring occasionally, until slightly tender.
Pour in the diced tomatoes and chicken broth. Add the salt, black pepper, smoked paprika, cayenne pepper, and sugar. Stir well to combine.
Reduce the heat to low and simmer uncovered for 20–25 minutes, stirring occasionally, until the stew thickens and the flavors blend together.
Serve warm as a Southern side dish or over rice with cornbread.
