Fried Blackberry Hand Pies

Ingredients:

  • 2 cups blackberries
  • 1/3 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 package refrigerated pie crusts
  • 1 egg, beaten
  • Vegetable oil for frying
  • Powdered sugar for topping


Instructions:

In a saucepan over medium heat, combine the blackberries, sugar, cornstarch, lemon juice, and vanilla extract. Cook for about 5–7 minutes, stirring gently, until the mixture thickens. Let cool slightly.

Roll out the pie crusts and cut into circles. Spoon a small amount of blackberry filling into the center of each circle.

Brush the edges with beaten egg, fold over to form half-moon pies, and press the edges tightly with a fork to seal.

Heat vegetable oil in a deep skillet or pot over medium heat. Fry the hand pies in batches for about 2–3 minutes per side until golden brown and crispy.

Remove and place on paper towels to drain excess oil. Dust with powdered sugar before serving warm.
