Spicy Chicken Cheesesteak Subs

Ingredients

  • 2 large hoagie or Italian sub rolls
  • 1 lb boneless, skinless chicken breasts (chopped into bite-sized pieces)
  • 2 tbsp olive oil (divided)
  • 1/2 large yellow onion (thinly sliced)
  • 1/2 red bell pepper (thinly sliced)
  • 1/2 green bell pepper (thinly sliced)
  • 1 1/2 tbsp Cajun or blackened seasoning
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 4-6 slices provolone or white American cheese
  • 1 tbsp fresh parsley (finely chopped, for garnish)
  • 1 tbsp butter (softened, for toasting rolls)

Instructions

Slice the sub rolls open. Spread a thin layer of softened butter on the inside of each roll. Toast them face-down in a large skillet over medium heat until golden brown and slightly crispy. Set the rolls aside on a serving plate.
In the same skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced onions, red bell peppers, and green bell peppers. Sauté for 5-7 minutes until they are softened and beautifully caramelized. Remove the vegetables from the pan and set aside.
Add the remaining 1 tablespoon of olive oil to the hot skillet. Add the chopped chicken. Season generously with the Cajun seasoning, garlic powder, salt, and black pepper to achieve that dark, savory crust. Cook for 6-8 minutes, stirring frequently, until the chicken is cooked through and well-browned.
Return the cooked peppers and onions to the skillet with the chicken. Toss everything together until well combined and heated through.
Reduce the heat to low. Divide the chicken and vegetable mixture into two long rectangular portions right in the pan, roughly matching the length of your sub rolls.
Lay 2-3 slices of cheese over each portion of the hot chicken mixture. Let it sit for 1-2 minutes until the cheese is completely melted and bubbling. (Tip: Cover the pan with a lid for 30 seconds to trap the heat and melt the cheese faster).
Use a large spatula to carefully scoop up each cheesy chicken portion and place it directly onto the toasted sub rolls.
Garnish the tops of the melted cheese with a sprinkle of finely chopped fresh parsley and serve immediately while hot.
