AUTHENTIC KEY LIME PIE
If you’re looking for a dessert that tastes like a tropical vacation, this is it! This pie is the perfect balance of “pucker-up” tartness and sweet, creamy goodness.
Forget the green food coloring—an Authentic Key Lime pie is naturally a beautiful pale yellow. It’s simple, elegant, and always the star of the show!
INGREDIENTS
The Graham Cracker Crust:
- 1 ½ cups Graham cracker crumbs
- 1/3 cup Granulated sugar
- 6 tbsp Butter, melted
The Tangy Filling:
- 2 cans (14 oz each) Sweetened Condensed Milk
- 1/2 cup Sour cream (The secret to that extra creamy texture!)
- 3/4 cup Key Lime juice (Freshly squeezed or bottled “Nellie & Joe’s”)
- 1 tbsp Key Lime zest
The Topping:
- 1 cup Heavy whipping cream
- 2 tbsp Powdered sugar
- Extra lime zest or thin lime slices for garnish
INSTRUCTIONS
1. The Crust: Preheat your oven to 350°F. Mix the crumbs, sugar, and melted butter. Press firmly into a 9-inch pie plate. Bake for 8 minutes, then let it cool completely.
2. The Filling: In a large bowl, whisk together the sweetened condensed milk, sour cream, Key Lime juice, and zest. Whisk until smooth and thick.
3. The Bake: Pour the filling into your cooled crust. Bake for 15–18 minutes. You aren’t looking for it to brown—you just want it to “set” so it only has a slight jiggle in the center.
4. The Chill (The Most Important Part!): Let the pie cool to room temperature, then refrigerate for at least 4 to 6 hours (overnight is even better!). This is what gives it that perfect, sliceable texture.
5. The Finish: Whip the heavy cream and powdered sugar until stiff peaks form. Pipe or dollop onto the chilled pie and garnish with zest!
PRO TIPS:
Key Limes vs. Regular Limes: Key Limes are smaller, tarter, and more aromatic. If you can’t find them, you can use a mix of regular lime juice and a little lemon juice to mimic the flavor!
Don’t Overbake: If you see bubbles forming on the surface or the edges cracking, you’ve left it in too long.
The “Zest” Secret: Always zest your limes before you juice them. It’s much easier on your fingers!
