🥘 Classic Beef Casserole

🧾 Ingredients

800 g (1¾ lb) stewing beef, large chunks

2 tbsp olive oil
-
1 onion, chopped
-
3 cloves garlic, minced
-
3 carrots, sliced
-
2 tbsp tomato paste
-
2 tbsp flour
-
2 cups beef stock
-
1 cup red wine (or extra stock)
-
1 tsp dried thyme
-
1 bay leaf
-
Salt & black pepper
Optional but elite:

Mushrooms 🍄

Potatoes 🥔
-
Splash of Worcestershire sauce
👩🍳 Instructions
1️⃣ Brown the beef

Preheat oven to 160°C / 325°F.

Season beef well.

Heat oil in an ovenproof pot.

Brown beef in batches. Remove.
2️⃣ Build flavor

In same pot, cook onion until soft.

Add garlic, cook 30 sec.

Stir in tomato paste and flour.
3️⃣ Deglaze

Pour in wine, scraping the pot.

Add stock, herbs, bay leaf, Worcestershire.

Bring to a gentle simmer.
4️⃣ Slow cook

Return beef (and veg if using).

Cover and bake 2–2½ hours, stirring once.
5️⃣ Finish

Remove bay leaf.

Taste, adjust seasoning.

Rest 10 minutes before serving.
