🧾 Ingredients
Dough

500 g (4 cups) all-purpose flour

200 g (1 cup) unsalted butter, softened

100 g (½ cup) sugar

2 eggs
-
25 g (2¼ tsp) fresh yeast
(or 7 g / 2¼ tsp dry yeast) -
½ cup warm milk

1 tsp vanilla sugar or vanilla extract

Pinch of salt
Filling
-
300 g (3 cups) finely ground walnuts
-
150 g (¾ cup) sugar
-
300 g (1 cup) apricot jam (smooth, good quality)
Chocolate Glaze

100 g (3½ oz) dark chocolate
-
2 tbsp butter
-
1 tbsp milk or cream
👩🍳 Instructions
1️⃣ Activate yeast

Dissolve yeast in warm milk with 1 tsp sugar.

Let stand 5–10 minutes until foamy.
2️⃣ Make the dough

Mix flour, sugar, salt.
-
Rub in butter until crumbly.

Add eggs, vanilla, and yeast mixture.

Knead until smooth and soft.
-
Divide dough into 3 equal parts.

Cover and rest 30 minutes.
3️⃣ Prepare filling

Mix ground walnuts with sugar.

Warm jam slightly for easier spreading.
4️⃣ Assemble layers

Roll first dough layer to tray size.

Place in lined baking tray.

Spread ½ the jam, then sprinkle ½ the walnut mixture.

Repeat with second layer.

Roll final dough layer and place on top.

Prick surface lightly with a fork.
5️⃣ Bake

Preheat oven to 180°C / 350°F.

Bake 30–35 minutes until lightly golden.

Cool completely in the tray.
6️⃣ Chocolate glaze
-
Melt chocolate, butter, and milk gently.
-
Spread evenly over cooled cake.
-
Let glaze set before slicing.
