🍞 Irish Tea Brack (Irish Tea Bread)

🧾 Ingredients

  • 2 cups mixed dried fruit (raisins, sultanas, currants)

  • 1 ½ cups hot strong black tea (no milk)

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp mixed spice (or cinnamon + nutmeg)

  • ½ cup brown sugar

  • 1 egg, beaten

  • Pinch of salt

👩‍🍳 Instructions

1️⃣ Soak the fruit

  • Place dried fruit in a bowl.

  • Pour hot tea over it.

  • Cover and soak 1–2 hours (or overnight for best flavor).

  • Do not drain.

2️⃣ Prep oven

  • Preheat to 170°C / 340°F.

  • Grease or line a loaf pan.

3️⃣ Mix dry ingredients

  • In a large bowl, whisk flour, baking soda, mixed spice, sugar, and salt.

4️⃣ Combine

  • Add soaked fruit with all the tea.

  • Stir in beaten egg.

  • Mix until just combined (don’t overmix).

5️⃣ Bake

  • Pour batter into loaf pan.

  • Bake 55–65 minutes.

  • If browning too fast, tent loosely with foil.

6️⃣ Cool & serve

  • Cool in pan 10 minutes, then transfer to a rack.

  • Slice and serve with butter ☺️
