Old-Fashioned Blackberry Cobbler

Ingredients

Blackberry Filling

  • 4 cups fresh or frozen blackberries

  • ¾–1 cup granulated sugar (adjust to berry sweetness)

  • 1 tbsp lemon juice

  • 1 tbsp cornstarch (or 2 tbsp flour)

  • ½ tsp ground cinnamon (optional)

  • Pinch of salt

Biscuit Topping

  • 1½ cups all-purpose flour

  • 2 tbsp granulated sugar

  • 1½ tsp baking powder

  • ½ tsp salt

  • 6 tbsp cold butter, cubed

  • ¾ cup milk or buttermilk

  • ½ tsp vanilla extract

Instructions

1. Preheat

Preheat oven to 375°F (190°C).
Butter an 8×8-inch baking dish or similar.

2. Make the Filling

In a bowl, gently toss:

  • blackberries

  • sugar

  • lemon juice

  • cornstarch

  • cinnamon & salt

Spread evenly in the baking dish.

3. Make the Biscuit Topping

  1. Whisk flour, sugar, baking powder, and salt.

  2. Cut in cold butter until coarse crumbs form.

  3. Stir in milk and vanilla just until combined.
    (Dough will be thick and shaggy.)

4. Assemble

Drop spoonfuls of biscuit dough over the berries, leaving gaps for bubbling juices.

Optional: sprinkle the top with 1–2 tbsp sugar for crunch.

5. Bake

Bake 40–45 minutes, until:

  • topping is golden

  • filling is bubbling around edges

If browning too fast, tent loosely with foil.
