Gavros Tiganitos (Fried Anchovies)
Crispy, golden anchovies with a squeeze of lemon — the ultimate Greek seaside meze!

Ingredients
• Fresh anchovies – 500 g (cleaned)
• Flour – 100 g
• Olive oil (for frying)
• Lemon – for serving
• Salt

Instructions

Rinse anchovies, pat dry, and lightly salt them.
Coat with flour, shaking off the excess.

Heat olive oil in a frying pan.

Fry anchovies in batches for 2–3 minutes per side, until golden.

Drain on paper towels and serve with lemon wedges.
