Ingredients
For the sandwich

2 slices bread (sourdough or thick-cut preferred)

2–3 slices cooked bacon

2–3 slices cheddar, Monterey Jack, or pepper jack

1–2 tbsp butter, softened
For quick guacamole

1 ripe avocado
-
1–2 tbsp lime juice
-
1 tbsp finely chopped onion (optional)

1 tbsp chopped cilantro (optional)
-
A pinch of salt
-
A few dashes hot sauce (optional)
Instructions
1. Make the guacamole
Mash the avocado with lime juice, salt, and any optional add-ins until smooth or chunky — up to your preference.
2. Assemble the sandwich

Butter one side of each bread slice.

On the unbuttered side of one slice, layer:

cheese
-
bacon
-
a generous layer of guacamole

more cheese (helps seal and melt)

Top with the second slice, buttered side facing out.
3. Grill
Heat a skillet over medium heat.
Cook the sandwich 2–4 minutes per side, until the bread is golden and the cheese is melted.
Press gently with a spatula for extra crispness.
4. Serve
Let rest 1 minute, slice in half, and enjoy warm.
