Easy 20-Minute Healthy Chicken and Broccoli Stir-Fry

Ingredients (2–3 servings)

For the Stir-Fry

  • 350–400 g chicken breast, thinly sliced

  • 2 cups broccoli florets

  • 1 small onion, sliced (optional)

  • 1 tbsp olive oil or sesame oil

  • 2 cloves garlic, minced

  • 1 tsp fresh ginger, minced (optional but recommended)

For the Sauce

  • 3 tbsp soy sauce (or low-sodium)

  • 1 tbsp honey or brown sugar

  • 1 tbsp cornstarch

  • 3 tbsp water

  • 1 tbsp rice vinegar or lemon juice

  • 1 tbsp oyster sauce (optional but delicious)

Instructions

1. Prepare the Sauce

In a small bowl, whisk together:

  • soy sauce

  • honey

  • cornstarch

  • water

  • vinegar

  • oyster sauce

Set aside.

2. Cook the Chicken

  1. Heat oil in a large pan or wok over medium-high heat.

  2. Add sliced chicken and season lightly with salt and pepper.

  3. Sauté for 4–5 minutes until golden and cooked through.

  4. Remove chicken and set aside.

3. Stir-Fry the Vegetables

  1. In the same pan, add a little oil if needed.

  2. Add garlic and ginger — cook 30 seconds until fragrant.

  3. Add broccoli (and onion if using).

  4. Stir-fry 3–4 minutes, adding a splash of water to help steam and soften.

4. Combine Everything

  1. Return the chicken to the pan.

  2. Pour in the sauce and mix well.

  3. Cook 2–3 minutes, stirring, until the sauce thickens and coats everything.

5. Serve

Serve immediately over:

  • steamed rice

  • noodles

  • or by itself for a low-carb meal.
