Ingredients

  • 1 cup brown sugar (packed)

  • 1 cup granulated sugar

  • 1 cup vegetable oil (or melted butter for richer flavor)

  • 4 large eggs

  • 1½ cups all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 1 teaspoon vanilla extract

  • 2 cups finely chopped pecans

Instructions

  1. Preheat oven:
    Set your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or two loaf pans.

  2. Mix wet ingredients:
    In a large bowl, whisk together brown sugar, granulated sugar, oil, and eggs until smooth.

  3. Combine dry ingredients:
    In another bowl, stir together flour, baking powder, and salt.

  4. Combine batter:
    Add the dry mixture into the wet mixture. Stir until just combined — don’t overmix.

  5. Add vanilla & pecans:
    Stir in vanilla extract and the chopped pecans.

  6. Bake:
    Pour the batter into your prepared pan(s) and spread evenly.
    Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.

  7. Cool and serve:
    Let the bread cool in the pan for about 10 minutes before slicing. Serve warm or at room temperature.

  • For extra flavor: Toast the pecans before adding them — about 5–7 minutes at 350°F.

  • Optional glaze: Mix 1 cup powdered sugar with 2–3 tbsp milk and a splash of vanilla. Drizzle over the cooled bread.

  • Make it mini: Divide into muffin tins for pecan bites (bake ~20 minutes).
