Ingredients

1 lb (450 g) ground beef

1 small onion, diced (spring onions work great for garnish too)

2 cloves garlic, minced

1 cup mixed vegetables (peas, corn, carrots, or chopped bell peppers)

1 can (15 oz) tomato sauce or diced tomatoes

1 tsp Italian seasoning (or a mix of oregano, thyme, and basil)

½ tsp paprika

Salt and black pepper, to taste

2 cups cooked pasta (elbow, penne, or rotini) or 2 cups cooked rice (your choice)

1½ cups shredded cheese (cheddar, mozzarella, or a blend)

Optional: ¼ cup sour cream or cream cheese for a creamy version
Instructions

Brown the Beef

In a large skillet, cook ground beef over medium heat until browned.

Drain excess fat, then add onion and garlic. Cook until softened (3–4 min).

Add Sauce and Veggies

Stir in tomato sauce (or diced tomatoes), vegetables, Italian seasoning, paprika, salt, and pepper.

Simmer for 5–7 minutes to let flavors blend.

Mix and Layer

Stir in cooked pasta or rice and mix until evenly coated.

For a creamy casserole, stir in sour cream or cream cheese at this stage.

Pour mixture into a greased 9×13″ baking dish.
