🧀 Ground Beef Casserol

Ingredients

  • 1 lb (450 g) ground beef

  • 1 small onion, diced (spring onions work great for garnish too)

  • 2 cloves garlic, minced

  • 1 cup mixed vegetables (peas, corn, carrots, or chopped bell peppers)

  • 1 can (15 oz) tomato sauce or diced tomatoes

  • 1 tsp Italian seasoning (or a mix of oregano, thyme, and basil)

  • ½ tsp paprika

  • Salt and black pepper, to taste

  • 2 cups cooked pasta (elbow, penne, or rotini) or 2 cups cooked rice (your choice)

  • 1½ cups shredded cheese (cheddar, mozzarella, or a blend)

  • Optional: ¼ cup sour cream or cream cheese for a creamy version

Instructions

  1. Brown the Beef

    • In a large skillet, cook ground beef over medium heat until browned.

    • Drain excess fat, then add onion and garlic. Cook until softened (3–4 min).

  2. Add Sauce and Veggies

    • Stir in tomato sauce (or diced tomatoes), vegetables, Italian seasoning, paprika, salt, and pepper.

    • Simmer for 5–7 minutes to let flavors blend.

  3. Mix and Layer

    • Stir in cooked pasta or rice and mix until evenly coated.

    • For a creamy casserole, stir in sour cream or cream cheese at this stage.

  4. Assemble

    • Pour mixture into a greased 9×13″ baking dish.

    • Top generously with shredded cheese.

  5. Bake

    • Bake at 375°F (190°C) for 20–25 minutes, until cheese is melted and bubbly.

  6. Serve

    • Sprinkle with sliced spring onions for color and freshness.

    • Serve hot with a side salad or garlic bread.
