🦀 Crab-Stuffed Cheddar Bay Biscuits with Lemon Butter

Ingredients:

For the Biscuits:

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • 1 tsp garlic powder

  • ½ tsp salt

  • 1 cup shredded sharp cheddar cheese

  • ¾ cup cold buttermilk

  • ½ cup (1 stick) unsalted butter, melted

For the Crab Filling:

  • 8 oz lump crab meat (picked over for shells)

  • 2 tbsp mayonnaise

  • 1 tsp Dijon mustard

  • 1 tsp lemon juice

  • 1 tbsp chopped fresh parsley

  • Salt and pepper, to taste

For the Lemon Butter Topping:

  • 3 tbsp melted butter

  • 1 tsp lemon zest

  • 1 tbsp lemon juice

  • ½ tsp garlic powder

  • 1 tbsp chopped parsley


Instructions:

  1. Preheat oven:
    Set to 425°F (220°C). Line a baking sheet with parchment paper.

  2. Make the crab filling:
    In a bowl, combine crab meat, mayonnaise, Dijon mustard, lemon juice, parsley, salt, and pepper. Gently mix and set aside.

  3. Prepare the biscuit dough:
    In a large bowl, whisk together flour, baking powder, garlic powder, and salt. Stir in cheddar cheese. Add melted butter and buttermilk; stir just until combined (dough will be slightly sticky).

  4. Assemble the biscuits:
    Scoop about 2 tablespoons of dough and flatten slightly in your hand. Place 1 tablespoon of crab filling in the center, then top with another small piece of dough and pinch the edges to seal. Repeat with remaining dough and filling.

  5. Bake:
    Place biscuits on the prepared baking sheet and bake for 12–15 minutes, or until golden brown.

  6. Make the lemon butter:
    While baking, whisk together melted butter, lemon zest, lemon juice, garlic powder, and parsley.

  7. Finish and serve:
    Brush warm biscuits generously with lemon butter right out of the oven. Serve immediately
