Country Ham with Redeye Gravy

🍳 Country Ham with Redeye Gravy

Ingredients:

  • 4 slices country ham (ΒΌ-inch thick)

  • Β½ cup strong black coffee

  • ΒΌ cup water (optional, to adjust flavor or thickness)

  • 1–2 tsp butter (optional, for richness)

Instructions:

  1. Fry the ham:
Heat a large skillet (preferably cast iron) over medium heat. Add the ham slices and cook for 2–3 minutes per side, until browned and slightly crisp on the edges. Remove the ham and set aside, leaving the drippings in the pan.

  2. Make the redeye gravy:
With the skillet still hot, carefully pour in the black coffee. Stir and scrape up any browned bits from the bottom β€” this is where all the flavor lives! Simmer for 1–2 minutes, letting the mixture reduce slightly.

  3. Adjust the flavor:
For a smoother, slightly milder gravy, stir in a splash of water or a pat of butter. Taste and adjust as needed β€” the gravy should be bold, smoky, and a bit salty.

  4. Serve:
Pour the redeye gravy over the ham or serve it alongside warm biscuits or creamy grits to soak up the savory sauce.

Tip: If your ham is very salty, give it a quick rinse or brief soak in water before cooking.
