Seafood Fried Rice
A savory, flavorful fried rice dish with succulent shrimp and perfectly seasoned vegetables. The perfect combination of tender rice, juicy shrimp, and seasonings that make each bite irresistible!
Ingredients:
For the Fried Rice:
2 cups cooked rice (preferably cold, day-old rice works best)
1 lb large shrimp, peeled and deveined
2 tbsp vegetable oil (for frying)
1/2 cup bell peppers, chopped (red, green, or both)
1/4 cup onions, finely chopped
2 cloves garlic, minced
1/4 cup frozen peas (optional)
1/4 cup carrots, diced
2 eggs, lightly beaten
1/4 cup soy sauce
1 tsp sesame oil
1/2 tsp smoked paprika
Salt and black pepper to taste
1/4 cup green onions, chopped (for garnish)
Fresh parsley or cilantro, chopped (optional for garnish)
For the Grilled Shrimp:
1 lb shrimp, peeled and deveined
1 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp cayenne pepper (optional for heat)
Salt and black pepper to taste
Instructions:Grill the Shrimp:
1.Preheat your grill or grill pan to medium-high heat.
2.Season the shrimp: In a bowl, toss the shrimp with olive oil, garlic powder, smoked paprika, onion powder, cayenne pepper (if using), salt, and black pepper.
3.Grill the shrimp: Place the shrimp on the grill and cook for about 2-3 minutes per side, or until they are pink and opaque. Remove from heat and set aside.
Make the Fried Rice:
4. Prepare the rice: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the onions, garlic, and bell peppers and sauté for about 2-3 minutes until softened.
5. Add the vegetables: Stir in the carrots and peas (if using) and cook for another 2 minutes.
6. Add the rice: Push the vegetables to one side of the skillet. Add the cold rice to the pan and break up any clumps. Stir everything together.
7. Scramble the eggs: In the empty space in the skillet, pour in the beaten eggs and scramble them. Once cooked, mix them into the rice.
8. Season the rice: Add the soy sauce, sesame oil, smoked paprika, salt, and black pepper. Stir everything together until well mixed and heated through.
