Traditional Spaghetti Carbonara and Homemade Garlic bread
π Traditional spaghetti carbonara
Ingredients (serves 2):
- 200 g spaghetti
- 100 g pancetta or cubed smoked streaky bacon
- 2 large egg yolks
- 1 whole egg
- 50 g freshly grated pecorino Romano or Parmesan
- 1 tablespoon of olive oil
- Freshly ground black pepper
- Salt for the pasta water
π¨βπ³ Instructions:
Cook the pasta:
- Bring a large pot of salted water to the boil.
- Add the spaghetti and cook until al dente. Reserve 1/2 cup of the pasta water before draining.
Prepare the pancetta:
- While the pasta is cooking, heat 1 tablespoon of olive oil in a pan over a medium heat.
- Add the pancetta or bacon and fry until crispy. Remove from the heat and set aside.
Make the sauce:
- In a bowl, whisk together the egg yolks, whole egg, grated cheese and plenty of black pepper.
Combine:

- Add the hot, drained pasta to the pan with the pancetta (turn off the heat).
- Quickly pour the egg mixture over the pasta and toss vigorously. Add a splash of the reserved pasta water to help create a silky sauce.
- Stir until the pasta is well coated and glossy (do not cook over direct heat to avoid scrambling the eggs).
Serve:
- Plate up the pasta and top with extra pancetta, grated cheese and freshly ground pepper.
π₯ Homemade garlic bread
π§Ύ Ingredients:
- 2 slices of thick rustic or sourdough bread
- 2 tbsp softened unsalted butter
- 2 cloves of garlic, finely chopped
- 1 tablespoon of finely chopped fresh parsley
- Pinch of sea salt
π¨βπ³ Instructions:
Make the garlic butter:
- In a small bowl, mix softened butter with garlic, parsley and a pinch of salt.
Toast the bread:
- Toast the bread slices in a pan or toaster until golden and crispy.
Spread:
- While still warm, generously spread the garlic butter over each slice.
Serve:
- Serve warm alongside your pasta.
