ROAST PORK RECIPE
🍖 The perfect roast pork recipe (with crispy crackling).
🕒 Prep time: 20 minutes.
Cook time: 2 hours.
🍽 Serves: 6
🛒 Ingredients:
- 1.5–2 kg (3–4 lb) of pork shoulder or pork loin with the skin on
- 1 tablespoon olive oil
- 1 tablespoon of sea salt flakes
- 1 tsp black pepper
- 2 tsp fennel seeds (optional, but recommended)
- 4 garlic cloves, sliced
- 2 sprigs of fresh rosemary, or 1 teaspoon of dried rosemary
- 1 large onion, sliced
- 2 carrots, roughly chopped
- 1 cup of chicken stock or dry white wine
🔪 Instructions:
🔥 1. Prepare the pork:
- Pat the pork skin very dry with kitchen roll.
- Using a sharp knife, score the skin in thin lines or a crisscross pattern, taking care not to cut deep into the meat.
- Rub the pork all over with olive oil, salt, pepper and fennel seeds.
- Push sliced garlic and rosemary into the scored cuts.
🧅 2. Set up the roasting base:
- Preheat the oven to 240°C/460°F (fan: 220°C/430°F).
- Place the sliced onions and carrots in the bottom of a roasting tin.
- Pour in stock or wine. Place the pork on top, skin-side up.
🍖 3. Roast for crispy crackling:

- Start by roasting at a high heat (240°C/460°F) for 30 minutes to crisp up the crackling.
- Then reduce the heat to 160°C/320°F and roast for a further 1 hour 30 minutes, or until cooked through (internal temperature: 70°C/160°F).
4. Rest before slicing:
- Remove the pork from the oven and leave to rest, uncovered, for 15–20 minutes to keep the crackling crispy.
- While it is resting, you can strain the pan juices and simmer them to make gravy, if desired.

- Crispy roasted potatoes or mashed potatoes.
- Seasonal roasted vegetables or green beans.
- Apple sauce or mustard.
