 ROAST PORK RECIPE

🍖 The perfect roast pork recipe (with crispy crackling).
🕒 Prep time: 20 minutes.
Cook time: 2 hours.
🍽  Serves: 6

🛒 Ingredients:

  • 1.5–2 kg (3–4 lb) of pork shoulder or pork loin with the skin on
  • 1 tablespoon olive oil
  • 1 tablespoon of sea salt flakes
  • 1 tsp black pepper
  • 2 tsp fennel seeds (optional, but recommended)
  • 4 garlic cloves, sliced
  • 2 sprigs of fresh rosemary, or 1 teaspoon of dried rosemary
  • 1 large onion, sliced
  • 2 carrots, roughly chopped
  • 1 cup of chicken stock or dry white wine

🔪 Instructions:

🔥 1. Prepare the pork:

  • Pat the pork skin very dry with kitchen roll.
  • Using a sharp knife, score the skin in thin lines or a crisscross pattern, taking care not to cut deep into the meat.
  • Rub the pork all over with olive oil, salt, pepper and fennel seeds.
  • Push sliced garlic and rosemary into the scored cuts.

🧅 2. Set up the roasting base:

  • Preheat the oven to 240°C/460°F (fan: 220°C/430°F).
  • Place the sliced onions and carrots in the bottom of a roasting tin.
  • Pour in stock or wine. Place the pork on top, skin-side up.

🍖 3. Roast for crispy crackling:

  • Start by roasting at a high heat (240°C/460°F) for 30 minutes to crisp up the crackling.
  • Then reduce the heat to 160°C/320°F and roast for a further 1 hour 30 minutes, or until cooked through (internal temperature: 70°C/160°F).

4. Rest before slicing:

  • Remove the pork from the oven and leave to rest, uncovered, for 15–20 minutes to keep the crackling crispy.
  • While it is resting, you can strain the pan juices and simmer them to make gravy, if desired.

🍽 Serve with:

  1. Crispy roasted potatoes or mashed potatoes.
  2. Seasonal roasted vegetables or green beans.
  3. Apple sauce or mustard.
