Slow Cooker Creamy Garlic Chicken and Veggies – A one pot crockpot meal! Tender chicken, potatoes and broccoli! Served with the creamiest garlic sauce ever!
Ingredients:
- 4 boneless, skinless chicken breasts
- 4 cloves garlic, minced
- 1 cup heavy cream or half-and-half
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 2 cups baby carrots
- 2 cups baby potatoes, halved
- 1 cup broccoli florets (optional)
- 1/2 cup grated Parmesan cheese
- Fresh parsley for garnish (optional)
Instructions:
1. Prepare the chicken: Season the chicken breasts with salt, pepper, paprika, thyme, and rosemary. Heat olive oil in a skillet over medium heat and sear the chicken for 2-3 minutes on each side until lightly browned. Transfer the chicken to the slow cooker.
2. Add the vegetables: Layer the baby carrots, baby potatoes, and broccoli (if using) around and on top of the chicken in the slow cooker.
3. Make the creamy garlic sauce: In a bowl, whisk together the chicken broth, heavy cream, minced garlic, and Parmesan cheese. Pour the mixture over the chicken and vegetables in the slow cooker.
4. Cook: Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is tender and the vegetables are cooked through.
5. Serve: Garnish with fresh parsley if desired and serve warm.
