Baked Lemon Butter Chicken
Ingredients:
4 boneless, skinless chicken breasts (or thighs)
Salt and pepper, to taste
1 tsp garlic powder
1 tsp paprika
1/4 cup butter (half a stick), melted
Juice of 1 lemon (about 2–3 tbsp)
Zest of 1 lemon (optional, but adds flavor)
4 garlic cloves, minced
1 tbsp olive oil
1 tsp Italian seasoning (or a mix of dried basil, oregano, thyme)
Fresh parsley or lemon slices for garnish (optional
Instructions:
1. Preheat oven:
Preheat your oven to 375°F (190°C).
2. Season the chicken:
Pat chicken dry. Season both sides with salt, pepper, garlic powder, and paprika.
3. Mix the lemon butter sauce:
In a small bowl, combine melted butter, lemon juice, lemon zest, minced garlic, olive oil, and Italian seasoning.
4. Assemble in a baking dish:
Place the chicken in a greased 9×13 baking dish. Pour the lemon butter mixture over the chicken.
5. Bake:
Bake uncovered for 30–35 minutes, or until the chicken is cooked through (internal temp of 165°F).
Tip: Spoon the sauce over the chicken halfway through for extra flavor.
6. Optional broil:
Broil for the last 2–3 minutes to get a golden top if desired.
7. Garnish and serve:
Sprinkle with fresh parsley or lay lemon slices on top before serving.
