🥚 Boiled Masala Eggs (USA Style)
Ingredients:

4 large eggs

1 tbsp oil or ghee

½ tsp cumin seeds

1 small onion, finely chopped
-
1 tomato, finely chopped
-
1 green chili, slit (optional)

½ tsp turmeric powder
-
1 tsp red chili powder (adjust to taste)

1 tsp coriander powder
-
½ tsp garam masala
-
Salt, to taste

2 tbsp chopped fresh cilantro (for garnish)

Lemon wedges, for serving
Instructions:

Boil the eggs:
Place eggs in a pot of cold water. Bring to a boil, then simmer for 8–9 minutes. Transfer to cold water, peel, and set aside. -
Make the masala base:
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add onions and sauté until golden brown. -
Add tomatoes and spices:
Stir in chopped tomato, green chili, turmeric, red chili powder, coriander powder, and salt. Cook until the tomatoes soften and the oil starts to separate from the masala (about 5–6 minutes). -
Add the eggs:
Slice the boiled eggs in half or make small slits to help absorb flavor. Gently toss them in the masala, coating evenly. Sprinkle garam masala on top. -
Garnish and serve:
Garnish with fresh cilantro and a squeeze of lemon juice. Serve hot with rice, chapati, or toast.
