π₯§ Steak and Kidney Pie Recipe
β Ingredients (serves 4):
For the filling:
- Β 500 g beef steak (braising steak or chuck), diced
- Β 250 g lamb kidneys, trimmed and diced
- 1 large onion, finely chopped
- 2 tbsp plain flour
- 400 ml beef stock
- 100 ml stout or ale (optional, for a richer flavour)
- 1 tsp Worcestershire sauce
- Salt and pepper to taste.
- 2 tbsp vegetable oil or beef dripping
For the pastry:
- 350 g plain flour
- 175 g of cold, diced butter
- 1 beaten egg (for glaze)
- Cold water
πͺ Instructions:
1. Cook the filling:
- Heat the oil in a large pan. Add the diced steak and kidneys and brown them on all sides.
- Add the chopped onions and cook until soft.
- Stir in the flour and cook for one minute.
- Gradually add the stock and beer. Then add the Worcestershire sauce, salt and pepper.
- Simmer gently for 1β2 hours until the meat is tender and the sauce is rich and thick.
- Leave to cool completely.
2. Make the pastry:

- Rub the butter into the flour until the mixture resembles breadcrumbs.
- Add just enough cold water to bring the dough together.
- Wrap it up and chill for 30 minutes.
3. Assemble the pie:
- Preheat the oven to 200Β°C/180Β°C fan/400Β°F.
- Roll out two-thirds of the pastry and use it to line a pie dish.
- Fill with the cooled meat filling.
- Roll out the remaining pastry to make the lid and seal the edges. Crimp the edges and brush with beaten egg.
- Cut a small steam hole.
- Bake for 30β35 minutes until golden brown.
π’ Mushy peas recipe
β Ingredients:
- 250 g dried marrowfat peas (or frozen peas for a quicker option).
- 1 tsp bicarbonate of soda (if using dried peas).
- Salt and pepper to taste.
– Optional: a knob of butter.
πͺ Instructions:
- Soak the dried peas overnight in cold water with bicarbonate of soda.
- Drain and rinse, then boil in fresh water for 30β40 minutes until soft and mushy. Season to taste and mash slightly.
- Add butter for richness.
π€ BEEF GRAVY
β Quick gravy:
- 1 tablespoon of beef dripping or butter
- 1 tbsp plain flour
- 250 ml beef stock
- 1 tsp Worcestershire sauce
- Salt and pepper.
πͺ Instructions:
- Melt the fat, stir in the flour and cook for one minute.
- Gradually whisk in the stock. Simmer until thickened.
- Add the Worcestershire sauce.
