Salmon Croquettes (Old-Fashioned and Crispy)
Ingredients (serves 4):
For the croquettes:
2 cups of cooked, flaked salmon (canned salmon works well – make sure you drain it and remove the bones)
1 large egg
½ cup of finely chopped onion
¼ cup of green bell pepper, finely chopped
2 tbsp fresh parsley (optional)
½ cup breadcrumbs (plus extra for coating)
2 tbsp mayonnaise or 1 tbsp mustard
1 tsp garlic powder
½ teaspoon paprika
Salt and black pepper to taste.
Optional but recommended: 1 tbsp lemon juice.
For frying:
Vegetable oil for shallow frying.
Instructions:
1. Prepare the mixture.
In a large bowl, add:
flaked salmon
Egg
, onion, bell pepper and parsley.
Breadcrumbs
Mayonnaise (or mustard).
Garlic powder, paprika, salt and pepper.
Lemon juice
Mix gently until everything is well combined.
2. Shape the croquettes.
Take about 2 tablespoons of the mixture.
Shape into small patties (round or oval).
Lightly coat with extra breadcrumbs.
Place them on a plate and leave to rest for 10 minutes to help them hold together.
3. Fry.
Heat the oil in a frying pan over a medium heat.
Fry the croquettes for 3–4 minutes on each side.
until golden brown and crispy.
Drain and serve.
Remove and place on kitchen roll to absorb excess oil.
Serving ideas:
Serve with:
Lemon wedges.
Tartar sauce or garlic mayonnaise.
Green salad or mashed potatoes.
Sautéed vegetables or corn
Tips & variations:
Add a pinch of cayenne pepper if you like spicy food.
You can bake them:
Bake at 200°C (400°F) for 18–20 minutes, flipping halfway through.
No breadcrumbs? Use crushed crackers.
