🥧 Pecan Dandy Do’s

Ingredients

For the crust:

  • 2 cups all-purpose flour

  • ½ cup powdered sugar

  • 1 cup (2 sticks) unsalted butter, softened

For the filling:

  • ¾ cup light corn syrup

  • ¾ cup brown sugar, packed

  • 2 large eggs

  • 3 tablespoons butter, melted

  • 1 teaspoon vanilla extract

  • 2 cups chopped pecans


Instructions

  1. Preheat oven:
    Set oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.

  2. Make the crust:

    • In a medium bowl, mix together the flour, powdered sugar, and softened butter until crumbly.

    • Press the mixture evenly into the bottom of the prepared pan.

    • Bake for 15–18 minutes, until lightly golden.

    • Remove from oven and set aside (keep oven on).

  3. Make the filling:

    • In a large bowl, whisk together corn syrup, brown sugar, eggs, melted butter, and vanilla extract until smooth.

    • Stir in the chopped pecans.

  4. Assemble and bake:

    • Pour the pecan mixture evenly over the pre-baked crust.

    • Bake for 25–30 minutes, or until the filling is set and slightly bubbly around the edges.

  5. Cool and cut:

    • Let cool completely in the pan before cutting into bars or squares.
