Orange Coconut Cake

This light and fluffy cake is inspired by the tropics, combining zesty orange flavour with sweet, toasty coconut. It’s perfect for birthdays, brunches, or any occasion that calls for a bright and cheerful cake.

Ingredients:

  1. All-purpose flour,
  2. sugar,
  3. baking powder,
  4. salt,
  5. eggs,
  6. butter,
  7. orange juice,
  8. orange zest,
  9. coconut milk and shredded coconut.
  10. You can also add whipped cream or a glaze for decoration.

Instructions

Preheat the oven and grease your cake pans. In a large bowl, cream the butter and sugar together until fluffy. Add the eggs one at a time, then stir in the orange juice, orange zest and coconut milk.

In another bowl, whisk together the flour, baking powder and salt. Gradually fold the dry ingredients into the wet mixture until smooth. Pour the batter into the prepared pans and bake until a toothpick inserted into the centre comes out clean.

Once cooled, frost with whipped cream or your favourite glaze, then sprinkle with shredded coconut. Slice and enjoy this moist, citrusy cake bursting with coconut flavour!
