Mom’s Famous Cream Puffs

Ingredients:

1 stick of butter (8 tablespoons)
1 cup of water
1 teaspoon of vanilla
4 eggs
1 cup of flour
Mom’s famous filling:
1 pint of heavy cream
1 packet (3.4 ounces) of instant vanilla pudding
⅓ cup of milk
Makes approx. 16

Instructions:

Bring the butter, water and vanilla to the boil.
Add the flour and stir constantly until the mixture leaves the sides of the pan and forms a ball.
Remove from the heat and leave to cool.
Beat in the eggs one at a time until smooth.
Drop spoonfuls onto parchment-lined baking trays.
Bake at 200°C for about 25–30 minutes.
Let cool.
Slice in half and pipe or scoop in mum’s filling.
Dust with icing sugar.
Filling:
Beat the cream, pudding powder and milk together in a mixer until the mixture is thick and resembles whipped cream.
