Creamy chicken salad sandwich

Ingredients (serves 2–3):

For the chicken salad:

2 cups of finely chopped or shredded cooked chicken breast

½ cup of mayonnaise (adjust to taste)

1 small celery stalk, finely chopped

2 tablespoons of red onion (or green onion), finely chopped

1 tablespoon of dill pickle relish or chopped pickles (optional but tasty).

1 tablespoon of lemon juice or apple cider vinegar

Salt and black pepper, to taste.

½ teaspoon of garlic powder (optional).

½ teaspoon paprika or mustard (optional).

For the sandwich:

White or wholemeal bread slices

Butter or mayonnaise for spreading (optional).

Serve with:

Fresh strawberries

1 apple

1 avocado

👩‍🍳 Instructions:

Prepare the chicken.

If not already cooked, boil or pan-fry the chicken breast with a little salt.

Leave to cool, then finely chop or shred.

Make the salad:

In a bowl, combine the chicken with mayonnaise, celery, onion and pickles.

Add the lemon juice, salt, pepper, garlic powder and paprika or mustard.

Mix until creamy and well combined.

Taste and adjust the seasoning if necessary.

Add more mayonnaise if you want it creamier.

Adjust the salt, pepper or lemon to taste.

Assemble the sandwich.

Spread the chicken salad generously on a slice of bread.

Top with another slice of bread or enjoy it open-faced, as shown in the photo.

Serve!

Serve with strawberries, apple and avocado on the side.

🌟 Tips:

Add chopped apples or grapes to the chicken salad for a sweet crunch.

Swap the mayonnaise for Greek yoghurt for a lighter version.

Best served chilled after 30 minutes.
