Apple Pie Bars Recipe
Ingredients:
For the crust:
2 ½ cups of all-purpose flour
1 teaspoon of salt
1 cup (2 sticks) of cold, cubed unsalted butter
1 large egg yolk
½ cup of milk
For the apple filling:
– 6 cups of thinly sliced, peeled apples (Granny Smith or Honeycrisp work well)
1 cup of granulated sugar
¼ cup packed brown sugar
2 tablespoons of all-purpose flour
1 teaspoon of cinnamon
¼ teaspoon of nutmeg
1/4 teaspoon salt
1 teaspoon of vanilla extract
1 tablespoon of lemon juice
For the glaze:
1 cup of icing sugar
2 tablespoons of milk (add more if needed to adjust the consistency).
½ teaspoon of vanilla extract
Instructions:
1. Prepare the crust.
In a large bowl, whisk together the flour and salt.
Cut in the cold butter using a pastry blender or fork until the mixture resembles coarse crumbs.
In a small bowl, whisk the egg yolk and milk together, then add to the flour mixture.
Stir just until the dough comes together.
Divide the dough in two, making one piece slightly larger than the other.
Roll out the larger piece of dough on a floured surface and place it in a greased 15×10-inch baking tray. Press evenly to fit.
2. Make the apple filling:
In a large mixing bowl, combine the apples with the sugars, flour, cinnamon, nutmeg, salt, vanilla and lemon juice. Toss well to coat.
Spread the mixture evenly over the pastry case.
3. Top crust
Roll out the remaining dough and carefully place it over the apple filling.
Pinch or press the edges to seal.
Prick the top crust several times with a fork to allow steam to escape.
4. Bake
Bake in a preheated oven at 190°C (375°F) for 40–45 minutes, until the top is golden brown and the filling is bubbling.
Leave to cool completely before adding the glaze.
5. Add the glaze:
In a small bowl, whisk together icing sugar, milk and vanilla until smooth.
Drizzle or spread evenly over the cooled bars.
Leave the glaze to set before cutting into squares or bars.

Serve the bars either warm or chilled. They are perfect with a scoop of vanilla ice cream or a drizzle of caramel sauce!
