My husband took one look at this bubbling away in the oven and said, “That smells like every good Friday night we ever had.” He wasn’t wrong. This is one of those meals that just hits different — cheesy, beefy, a little bit messy in the best way, and topped with all the fresh crunch you need to balance it out.
I made this on a whim last month when I had a bag of tortilla chips about to go stale and some ground beef that needed using. Didn’t expect it to become the most-requested dinner in this house, but here we are. My daughter scraped her plate clean and asked if we could “do this one again soon.” That’s the ultimate compliment around here.
What I love about this is how it takes all the best parts of a walking taco — that nostalgic, slightly chaotic handheld situation — and turns it into something you can actually serve at the table without anyone’s hands getting covered in sour cream. The layers get all melty and golden, the beef soaks into everything just right, and those fresh tomatoes and jalapeños on top? They make it feel less like a guilty comfort meal and more like something you’d actually be proud to bring to a potluck.
It’s one of those recipes that looks fancy enough to impress but is secretly so easy you could make it on a Tuesday without thinking twice.
**INGREDIENTS:**
* 1 teaspoon canola oil
* 1 pound ground beef
* 1 small onion, chopped
* 1 packet taco seasoning (or 2 tablespoons homemade)
* ¾ cup water
* 1 (10 oz) can diced tomatoes with green chiles, drained
* 3 cups crushed tortilla chips (about half a big bag)
* 2 cups shredded cheddar cheese (or Mexican blend)
* 1 cup sour cream
* 1 cup diced fresh tomatoes
* 2–3 fresh jalapeños, sliced thin
* Fresh cilantro, chopped
* (Optional swap: Greek yogurt works great in place of sour cream if that’s what you’ve got)
**INSTRUCTIONS:**
Preheat your oven to 350°F.
Heat the oil in a large skillet over medium-high heat.
Add the ground beef and chopped onion, breaking up the meat as it cooks until browned and the onion is soft — about 6–7 minutes.
Drain any excess grease.
Stir in the taco seasoning, water, and diced tomatoes with chiles.
Let it simmer for 3–4 minutes until it thickens up and smells deeply savory.
Spread the crushed tortilla chips evenly across the bottom of a greased 9×13 baking dish.
Spoon the seasoned beef mixture over the chips, spreading it out to cover everything.
Sprinkle the shredded cheese generously over the top.
Bake uncovered for 20–25 minutes, until the cheese is melted and bubbling at the edges with little golden spots forming.
Let it cool for just a couple minutes, then spread the sour cream across the top.
Pile on the fresh diced tomatoes, jalapeño slices, and cilantro.
Serve it straight from the dish while it’s still warm and gooey.
