Cheesy Ground Beef & Rice Casserole

🧀 Cheesy Ground Beef & Rice Casserole

That photo looks like a creamy, cheesy ground beef and rice casserole—a classic comfort-food dinner with seasoned beef, tender rice, lots of melted cheddar, and fresh parsley. Similar versions commonly use ground beef, rice, creamy soup, and cheddar.

🛒 Ingredients

Serves 6–8

  • 1 lb (450 g) ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz / 300 g) cream of mushroom soup
  • ½ cup milk
  • ½ cup sour cream
  • 1½–2 cups shredded sharp cheddar cheese, divided
  • 1 tsp Worcestershire sauce
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp salt, or to taste
  • 2 tbsp chopped fresh parsley
  • 1 tbsp olive oil, if needed

👩‍🍳 Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Brown the beef: Heat a large skillet over medium-high heat. Add the ground beef and diced onion. Cook for about 6–8 minutes, breaking the beef apart, until browned and the onion is tender.
  3. Add the garlic, paprika, garlic powder, salt, pepper, and Worcestershire sauce. Cook for another minute. Drain excess grease.
  4. Make the creamy mixture: In a large bowl, combine the cream of mushroom soup, milk, and sour cream. Stir until smooth.
  5. Add the cooked rice and seasoned beef mixture. Stir in 1 cup of shredded cheddar and mix until everything is evenly coated.
  6. Assemble: Transfer the mixture to the prepared baking dish and spread it evenly.
  7. Cover with foil and bake for 20 minutes.
  8. Remove the foil and sprinkle the remaining ½–1 cup cheddar cheese generously over the top.
  9. Return to the oven, uncovered, for 10–15 minutes, until the cheese is completely melted, bubbly, and lightly golden.
  10. Let it rest for 5 minutes, then sprinkle with fresh parsley.

😍 Serving

Serve hot with steamed broccoli, green beans, a simple salad, or warm dinner rolls.

Tip: For an especially creamy casserole, use freshly shredded cheddar rather than pre-shredded cheese. Similar recipes also use cream of chicken as an alternative to cream of mushroom.
