Ingredients

For the Steaks

  • 4 beef cube steaks or tenderized round steaks
  • 1 cup all-purpose flour

  • ½ teaspoon paprika
  • ½ teaspoon dried thyme
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter

For the Brown Gravy

  • 2 tablespoons butter or pan drippings
  • 2 tablespoons all-purpose flour
  • 2½ cups beef broth
  • ½ cup milk
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste

For the Mashed Potatoes

  • 2 pounds potatoes, peeled and cut into chunks
  • 4 tablespoons butter
  • ½ cup warm milk
  • ¼ cup sour cream, optional
  • Salt and black pepper, to taste
  • 1 tablespoon chopped fresh parsley, optional

Instructions

1. Prepare the steaks
Pat the steaks dry. In a shallow bowl, combine flour, salt, pepper, garlic powder, onion powder, paprika, and thyme.

Coat each steak thoroughly in the seasoned flour, pressing the flour onto the surface.

2. Brown the steaks
Heat the oil and butter in a large skillet over medium-high heat.

Add the steaks and cook for about 3–5 minutes per side, depending on thickness, until nicely browned and cooked through. Transfer to a plate and keep warm.

3. Make the gravy
Reduce the heat to medium. Leave the flavorful browned bits in the skillet.

Add 2 tablespoons butter if the pan looks dry. Sprinkle in the flour and whisk constantly for about 1–2 minutes.

Slowly pour in the beef broth while whisking to prevent lumps. Add milk and Worcestershire sauce.

Season with garlic powder, onion powder, salt, and pepper.

Simmer for 5–8 minutes, stirring occasionally, until thick and silky.

4. Return the steaks to the gravy
Place the steaks back into the skillet. Spoon gravy over the top and let everything simmer gently for 5 minutes so the meat absorbs some of that rich gravy.

5. Make the mashed potatoes
Boil the potatoes in salted water for 15–20 minutes, or until fork-tender.

Drain well, then mash with butter and warm milk. Stir in sour cream if using. Season with salt and pepper until creamy and flavorful.

Pile the mashed potatoes onto a plate, place a steak on top, and generously spoon the brown gravy over everything. Finish with a little chopped parsley.

Grandma’s tip: For the deepest flavor, don’t wash the skillet between cooking the steaks and making the gravy—the browned bits left in the pan are what give the gravy that rich, homemade taste.
