🛒 Ingredients
- 2 large chicken breasts
- ½ cup all-purpose flour
- 2 eggs
- 1 cup breadcrumbs or panko
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup vegetable oil, for frying
- Lemon wedges, for serving
- Fresh parsley, optional
👩🍳 Instructions
- Prepare the chicken: Slice each chicken breast horizontally into thin cutlets. Place between two sheets of plastic wrap and gently pound until about ¼ inch (6 mm) thick.
- Season: Season both sides with salt, pepper, garlic powder, and paprika.
- Set up the coating: Put flour in one bowl, beaten eggs in a second, and breadcrumbs in a third.
- Coat: Dip each chicken cutlet into the flour, then egg, then breadcrumbs. Press gently so the crumbs stick well.
- Fry: Heat the oil in a large skillet over medium-high heat. Fry the schnitzels for about 2–3 minutes per side, until golden brown and the chicken reaches 165°F/74°C internally.
- Drain: Transfer to a plate lined with paper towels or a wire rack.
- Serve: Finish with fresh lemon juice and parsley. 🍋🌿
