the Peach Cobbler Filling:

My husband walked into the kitchen Sunday morning and said, “What smells like heaven?” I was pulling these out of the oil, and honestly, I almost didn’t share.
These are cinnamon-sugar donuts stuffed with sweet peach cobbler filling and creamy cheesecake. They taste like summer and comfort and every warm memory you’ve ever had at a county fair. The cinnamon coating clings to the crispy edges, the cheesecake layer is velvety and rich, and that peach filling? Sticky, buttery, and absolutely perfect.
I made these on a whim because I had a can of peaches sitting in the pantry, and now my family won’t stop asking when I’m making them again.
**INGREDIENTS:**
*For the Peach Cobbler Filling:*
• 1 can sliced peaches in syrup (15 oz), drained and chopped
• ¼ cup light brown sugar
• 1 teaspoon ground cinnamon
• 1 tablespoon cornstarch
• 2 tablespoons butter
*For the Cheesecake Filling:*
• 8 oz cream cheese, softened
• ¼ cup powdered sugar
• 1 teaspoon vanilla extract
*For the Donuts:*
• 1 can refrigerated biscuit dough (8 count)
• Oil for frying
• ½ cup granulated sugar
• 1 tablespoon cinnamon
**INSTRUCTIONS:**
Make the peach filling first. Melt butter in a small saucepan over medium heat. Add chopped peaches, brown sugar, and cinnamon. Stir in cornstarch and cook until the mixture thickens and bubbles, about 5 minutes. Let it cool completely.
Beat the cream cheese, powdered sugar, and vanilla until smooth and fluffy. Set aside.
Heat about 2 inches of oil in a deep pan to 350°F. Separate the biscuits and use a small round cutter to cut a hole in the center of each one.
Fry the donuts in batches until golden brown on both sides, about 1–2 minutes per side. Drain on paper towels.
Mix the granulated sugar and cinnamon in a shallow bowl. While the donuts are still warm, roll them generously in the cinnamon sugar until fully coated.
Let the donuts cool slightly. Slice each donut in half horizontally. Spread a layer of cheesecake filling on the bottom half, spoon peach cobbler filling over that, then top with the other half.
Stack them high. Watch the filling ooze out the sides. Try not to eat three before anyone else gets one.
