Crispy Garlic Mushroom Bites with Vegan Herby Dip

These crispy mushroom bites are golden and crunchy on the outside, juicy and tender inside, and packed with garlic and herbs. They’re perfect as an appetizer, party snack, or comforting side dish—and the entire recipe is 100% vegan.

🛒 Ingredients

For the crispy mushrooms:

  • 500 g (1 lb) white button or cremini mushrooms
  • ¾ cup (90 g) all-purpose flour
  • 1 cup (240 ml) unsweetened plant milk
  • 1½ cups (150 g) panko breadcrumbs
  • ½ cup (50 g) regular breadcrumbs
  • 3 cloves garlic, finely minced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp nutritional yeast, optional
  • Cooking spray or oil, for baking/air frying
  • Fresh parsley, finely chopped, for garnish

For the cool vegan herby dip:

  • ½ cup (120 g) vegan mayonnaise
  • ½ cup (120 g) unsweetened vegan yogurt
  • 1 small garlic clove, finely grated
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon juice
  • ½ tsp dried Italian herbs
  • Salt and black pepper, to taste

👩‍🍳 Instructions

1. Prepare the mushrooms
Clean the mushrooms with a damp paper towel and trim the stems if necessary. Keep small mushrooms whole and halve larger ones so they cook evenly. Pat them very dry.

2. Make the coating stations
Place the flour in one shallow bowl.

In a second bowl, whisk together the plant milk and minced garlic.

In a third bowl, combine the panko, regular breadcrumbs, garlic powder, onion powder, Italian seasoning, smoked paprika, salt, pepper, and nutritional yeast.

3. Coat the mushrooms
Dip each mushroom into the flour, shaking off the excess. Then dip it into the garlic-infused plant milk. Finally, roll it thoroughly in the seasoned breadcrumb mixture, pressing gently so the crumbs stick.

For an extra-crispy crust, dip each mushroom into the plant milk and breadcrumbs a second time.

4. Bake
Preheat the oven to 220°C / 425°F.

Arrange the coated mushrooms on a parchment-lined baking sheet, leaving space between them. Lightly spray or brush them with oil.

Bake for 20–25 minutes, turning halfway through, until deeply golden and crisp.

5. Air-fryer option
Preheat the air fryer to 200°C / 400°F. Place the mushrooms in a single layer and lightly spray with oil.

Air fry for approximately 10–14 minutes, shaking the basket halfway through, until crispy and golden.

6. Make the vegan herby dip
Mix the vegan mayonnaise, vegan yogurt, garlic, parsley, dill, lemon juice, Italian herbs, salt, and pepper in a small bowl.

Cover and refrigerate for at least 15 minutes so the flavors develop.

7. Serve
Transfer the crispy mushrooms to a serving platter. Sprinkle with fresh parsley and serve immediately with the chilled herby vegan dip.

  • Dry the mushrooms well before coating—excess moisture can make the crust soggy.
  • Use panko breadcrumbs for a lighter, crunchier texture.
  • Don’t overcrowd the baking sheet or air-fryer basket.

  • Serve immediately for the best contrast between the crunchy crust and juicy mushroom center.
