Mac and Cheese Bites
Ingredients:
2 cups cooked macaroni
2 cups shredded cheddar cheese
1/2 cup milk
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon black pepper
2 eggs
1 cup breadcrumbs
Vegetable oil for frying
Instructions:
In a saucepan over medium heat, melt the butter. Stir in the flour and cook for 1 minute. Slowly whisk in the milk and cook until slightly thickened.
Add the shredded cheddar cheese, salt, and black pepper. Stir until the cheese is melted and smooth.
Mix the cheese sauce with the cooked macaroni until fully coated. Let the mixture cool slightly, then refrigerate for at least 1 hour until firm.
Shape the chilled mac and cheese into small balls or bites. Dip each one into beaten eggs, then coat with breadcrumbs.
Heat vegetable oil in a deep skillet or pot over medium heat. Fry the bites in batches for 2–3 minutes until golden brown and crispy.
Remove and drain on paper towels. Serve warm with your favorite dipping sauce.
