Southern Meatloaf
Ingredients:
- 2 pounds ground beef
- 1 small onion, finely chopped
- 1 green bell pepper, finely chopped
- 2 eggs
- 1 cup breadcrumbs
- 1/2 cup milk
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
For the Topping:
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon yellow mustard
Instructions:
Preheat the oven to 375°F. Lightly grease a loaf pan or baking dish.
In a large bowl, combine the ground beef, onion, bell pepper, eggs, breadcrumbs, milk, ketchup, Worcestershire sauce, salt, black pepper, and garlic powder. Mix until just combined.
Shape the mixture into a loaf and place it into the prepared pan.
In a small bowl, mix together the ketchup, brown sugar, and yellow mustard. Spread the topping evenly over the meatloaf.
Bake for 55–65 minutes until fully cooked and browned on top. Let the meatloaf rest for 10 minutes before slicing.
Serve warm with mashed potatoes, green beans, or mac and cheese.
