I can’t believe how juicy these steak bites get in the air fryer – no grill needed, just pure garlic butter magic that fills the kitchen with that irresistible sizzle.
It was one of those busy weeknights where I needed dinner fast, but wanted it to feel special, like a cozy steakhouse meal at home. The kids devoured every bite, and my husband asked for seconds (rare for him!).
**Ingredients**
*For the potatoes:*
3 large potatoes, cubed into bite-sized pieces
2 tbsp olive oil
Salt, pepper, garlic powder, paprika, and dried parsley (to taste – I go heavy on the garlic powder)
*For the steak bites:*
1.5 lbs sirloin steak, cut into 1-inch cubes
2 tbsp olive oil
Salt and pepper (generous pinches)
*For the garlic butter:*
4 tbsp butter, melted
4 cloves garlic, minced
1 tbsp fresh parsley, chopped (plus more for garnish)
A squeeze of lemon juice (optional, for brightness)
Toss the potato cubes with olive oil and seasonings in a bowl until they’re all glossy and coated.
Preheat your air fryer to 400°F, then spread the potatoes in a single layer in the basket. Air fry for 15-18 minutes, shaking halfway, until they’re crispy on the edges and fork-tender with that golden, caramelized vibe.
While the potatoes cook, pat the steak cubes dry and season with salt and pepper. Once the potatoes are done, set them aside and add the steak to the hot air fryer. Cook for 8-10 minutes, flipping once, until they’re seared outside but still pink and juicy inside (aim for medium-rare, about 135°F if you’re checking).
Mix the melted butter, minced garlic, parsley, and lemon juice in a small bowl – it should smell nutty and heavenly right away. Toss the hot steak bites and potatoes together in this garlic butter until everything’s slick and glistening. Garnish with extra parsley.
The trick to perfect steak bites? Don’t overcrowd the basket – they need space to crisp up without steaming. This feeds 4, and leftovers? Ha, good luck having any.
