Smash Burger Double Cheeseburger

This is the kind of burger that makes you forget every drive-thru Thin, crispy-edged patties stacked with melty cheese, tangy pickles, ketchup and mustard inside a soft toasted bun. It’s fast to make at home and perfect for burger night with fries on the side.

Ingredients:

400 g (about 14 oz) ground beef 80/20,
4 slices American or cheddar cheese,
2 soft burger buns,
4–6 dill pickle slices,
2 tbsp mayonnaise,
2 tbsp ketchup,
2 tbsp yellow mustard,
1 tbsp butter,
salt and black pepper,
1 small onion finely chopped (optional),
a drizzle of neutral oil for the pan.

Instructions:

Divide the ground beef into 4 loose balls and season the outside with salt and pepper. Heat a large cast-iron pan over medium-high heat with a thin film of oil. Place two balls of beef in the hot pan and immediately smash them very flat with a spatula or burger press, pressing the edges so they get lacy and crisp. Cook 1–2 minutes until the edges are brown, flip once and add a slice of cheese on top of each patty; cook another minute, then stack two patties together. Repeat with the remaining meat to make the second double stack.
While the burgers cook, slice the buns and toast them in another pan with a little butter until golden. Stir together the mayonnaise and a teaspoon of mustard for a quick burger sauce, then spread it on the bottom buns. Add a spoonful of chopped onion if you like, then place the hot double patties on top.
Finish each burger with pickle slices, a zigzag of ketchup and extra mustard, then cap with the top bun. Serve immediately while the cheese is still melty and the edges are crispy – the ultimate homemade smash burger!
