Pie Filling

2 cups mashed cooked sweet potatoes (about 2 medium sweet potatoes)

1 cup buttermilk

3 large eggs

1 cup granulated sugar

½ cup unsalted butter, melted

1 tsp vanilla extract

½ tsp cinnamon

½ tsp nutmeg

¼ tsp ginger (optional)

Crust

1 (9-inch) unbaked pie crust, homemade or store-bought
🧑🍳 Instructions
1. Prepare the sweet potatoes

Preheat oven to 350°F (175°C).

Bake or boil sweet potatoes until very soft.

Peel and mash until smooth (no lumps).
2. Mix the filling

In a large bowl, whisk together:

mashed sweet potatoes

melted butter
-
sugar
-
eggs
-
vanilla

Stir in the buttermilk until fully combined.

Add cinnamon, nutmeg, ginger (optional), and salt.

Mix until the batter is silky and smooth.
3. Fill and bake

Pour filling into the unbaked pie crust.

Smooth the top with a spatula.

Bake 50–60 minutes, or until the center is set and only slightly jiggly.

Cool at least 1 hour before slicing — the pie firms as it cools.
